Mashed Cauliflower


1 medium head of cauliflower
3 red potatoes
1 tsp. salt
1 Tbs. butter
1 cup sour cream
1 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. black pepper
1 tsp. parsley


1. Remove stem and leaves from cauliflower.  Clean cauliflower and potatoes.  Chop both into large pieces and place in a large stockpot.  Cover with water and add salt.  Bring water to a boil and cook vegetables until tender, about 15 minutes.

2. Drain water from vegetables.  Pour into a shallow bowl and mash with a potato masher.  Add butter, sour cream, garlic powder, salt, black pepper, and parsley.  Stir until combined.  Add salt and pepper to taste.
