Cream Cheese Frosting







I am really in love with Cream Cheese Frosting.  It's so creamy and rich without being overwhelming.  I use it on almost all of my cupcakes.  The only downside is that you must keep this frosting refrigerated - uh, dairy!  But the flavor and consistency far outweigh that one downside.  




Cream Cheese Frosting


Ingredients:


8 oz. cream cheese
1/2 cup butter, softened
4 cups powdered sugar
1 tsp. vanilla extract
1-4 Tbs. cold milk

Directions:

1. In a large bowl, cream together butter and cream cheese.  

2. Add 2 cups of powdered sugar and mix on low speed.  Add vanilla and 1 Tbs. milk.  Mix on medium speed.  Add 1 cup of powdered sugar.  Mix on medium speed.  Add another Tbs. of milk.  Mix on medium speed.  Add remaining cup of powdered sugar.  Mix on high speed.  Add milk, 1 Tbs. at a time, until desired consistency is reached.  Keep refrigerated.

Makes 6 cups
