Brownie Cupcakes


2/3 cup butter
5 oz. unsweetened baking chocolate, chopped
1 3/4 cup sugar
2 tsp. vanilla
3 eggs
1 cup flour


1. Preheat oven  to 350 degrees. Line muffin pan with cupcake liners or spray with nonstick cooking spray.

2. In a small saucepan, melt butter and chocolate over low heat, stirring constantly.  In a large bowl, combine sugar, vanilla, and eggs.  Slowly add chocolate mixture.  Stir in flour just until blended.  Mixture should be slightly lumpy.

5. Pour batter into liners, filling each 1/2-2/3 way full.  Bake 25-30 minutes until a toothpick inserted in the center comes out clean.  Allow to cool in pan for 10 minutes, then remove to a cooling rack.
