Realistic Resolutions with Gorton's


Hello my blogger friends.  Here we are, at the end of January.  Did you make resolutions for 2015?  I know I did.  One is to eat healthier.  No fad diets, no extreme measures.  Just healthier, more balanced.  And it was perfect timing for Gorton's Simply Bake fish fillets to enter my house.  Thanks to the people over at Gorton's for sending me some free samples to try!  We're big fish people in our house and I always love trying new ideas with seafood.



I have to tell you guys, I like this product a lot.  It was very simple to prepare - pull it out of the freezer (each fillet is in its own foil packet), pop it in the oven for 20 minutes, and you have a lovely fish fillet ready for eating, or using in another recipe like I did.  I wanted to try using a fish fillet like this in another recipe, Salmon Cakes. Something simple, fun, and different.  The salmon came out of the oven, it was perfect.  It bakes in a butter sauce which gave it great flavor and texture.  The only thing I wish that were different is that there was only salmon available in the store.  I was hoping for some tilapia to make some yummy fish tacos.  But all I could find was salmon.

Brooklyn Popcorn Review and Giveaway

I am so excited to be able to do this review.  Not only because it's some seriously awesome popcorn, but because I get to give some away to one of you!  Another giveaway?!  YES!

So I was approached by Brooklyn Popcorn® and asked if I would be willing to sample some of their gourmet popcorn.  We are a family of movies - we love sitting down together and watching a good flick while munching on treats.  And we are addicted to popcorn.  My girls LOVE movie theater popcorn with lots of butter.  I prefer kettlecorn with a little more sweetness to it.  But there's nothing quite like a bag of popcorn to keep your tastebuds awake.



Brooklyn Popcorn started out by.....New Yorkers!  Shocking, I know.  (Insert sarcastic chuckle)  And it's served from a food truck.  You don't just swing by their store, you have to track down their truck.  I'm sorry, but whenever I think of food in New York, I think of tiny pizza parlors, hot dog stands, bags of peanuts, and food trucks.  Portable food.  So the idea that gourmet popcorn is served out of a truck just makes it that much more authentic for me.  Seriously, how fun is that?!







Even more fun is how the popcorn is served.  Of course, you can get it in a bag, but even more fun is that you can get it served in various size "paint" cans. (No, they aren't formerly paint cans, but they are the tins that you see paint sold in) I'm a sucker for unusual packaging.  So when I got this can in the mail, I was giddy - and yes, I washed it out and saved it.

What?!  All those flavors?  Guess I've been guilty of supermarket popcorn for too long. I decided to go with their namesake - Brooklyn Mix.  A combo of White Cheddar and Chocolate.  It was sooooooo good.  And soooooooo gone in 2 days.  I had to hide the last bit for these pictures (and for my secret stash)!  My girls scarfed it down so fast.  It's such a wonderful combination of salty and sweet.  A lot of popcorn is either only salty or only sweet.  Can you imagine the Jalapeno Nacho?  I'm thinking that's on the docket for some baseball games this year.  The other thing I really liked about Brooklyn Popcorn is that it was not greasy. At all.  You can tell that they use quality ingredients and really care about what kind of product they put out.

Blueberry and Lemon Ricotta Pancakes (and a winner)

Now for another Brinner recipe.  It's funny, I RARELY make a fancy breakfast.  I am so not a morning person.  I'm the horrible mom who has cereal in the pantry or granola bars or bananas.  The only time my family gets a real, nice breakfast is holidays.  I think that's why Brinner is such a big deal at our house.  Recently, I took on a personal challenge to try making ricotta pancakes.  They sound weird.  I imagined lumps of cheese in my pancakes, kind of like lasagna.  Ew.  But, we have a policy in our house - don't knock it until you've tried it.






So, with back up plans, I put it in my mind that we were going to try them.  The day I was going to make them, I had a couple of lemons that were on the brink of death as well as half a container of blueberries. I kind of love blueberries.  Put them in pancakes or a pie and I am happy.  I'll even just munch on them for a snack.  So it just made sense - pancakes + blueberries = duh, yeah!  And by combining them all, I created a monster of my family.  Now all they want for brinner are these pancakes.  Yes, they are that good.  Even mother-in-law approved!  Double win for me!




Blueberry and Lemon Ricotta Pancakes


Ingredients:


1 1/2 cups flour
3 1/2 Tbs. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
2 lemons
1 cup milk
8 oz. ricotta cheese
3 eggs
1/2 tsp. vanilla
2 Tbs. butter, melted
1 cup fresh or frozen blueberries

Directions:

1. Preheat an electric griddle to 375 degrees, or a large skillet over medium high heat.

2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.  Whisk together.  Set aside

3. Zest the lemons and reserve about 1 1/2 Tbs. of zest.  Add zest to flour mixture.

3. Juice one of the lemons into a medium bowl.  Add milk, ricotta, eggs, vanilla, and melted butter.  Whisk vigorously to combine.  Immediately add to flour mixture.  Using a wooden spoon, gently stir dry and wet ingredients to combine.  DO NOT OVERMIX!  Gently fold in blueberries.

4. Grease griddle with cooking spray or butter.  Pour 1/4 cup pancake mix onto griddle.  Cook until bubbles form on top and the underside is browned.  Flip and cook until browned on other side.  Serve with syrup.

Makes 20-24 pancakes

Meeting Martha

I was given an incredible opportunity last week - to meet Martha Stewart.  THE Martha.  The mother of all things good.  If you don't understand that sentence, then you can tell how old I am.  I remember her show ending with "It's a good thing."  I'm old enough to remember when her show came out.  I'm old enough to remember all the SNL skits on her.  And I'm old enough to remember her for more than just her going to prison.  So yes, I was slightly giddy to meet her.








Most people remember the insider trading scandal that rocked the world of most housewives across the nation.  Our icon was guilty of what and was going where?!  But this is what I have found amazing about Martha - despite this, she has come back strong, working as hard as ever for what she believes in.  And when I met Martha, she was gracious and actually interested in what I do here in Vegas.  She was interested in my little blog with the funny title.  She taught me a lesson - despite dark days and trials, we just keep moving forward, working for what we believe in.


Anyway, so I was able to attend the book signing of Martha's new cookbook - Cakes.  There was a HUGE line.  Seriously.  With women of all ages (and yes, a couple of men too!).  I was so surprised, mainly because I arrived an hour early and expected no one to be there that early.  And as we were in line, people who saw what was happening and asked how they could get in on the opportunity.  It was so fun listening to all the stories of how Martha has inspired women of all ages.  Some remember her very first show.  Some remember her holiday special (which I remember the parody on SNL).  It was just neat hearing how Martha has touched so many women in so many different ways.









Now, about her cookbook.  There is something that I have always loved about Martha's cookbooks (and I'll admit, I've owned 3) - both the front and the back are filled with tips and detailed instructions.  For example, the front of her Cakes cookbook gives detailed tips on making cakes.  One of which is "Be mindful of recipes details.  If the ingredients list calls for '1 cup sifted flour,' then sift it first before you measure."  That may seem like a silly detail that you should just know, but sometimes when we're in the thick of baking, we forget little details like that.







Now, I couldn't just go to a book signing and not bake something afterwards, right?  So I came home and baked some cake.  More specifically, Martha's Mini Rum Bundt Cakes.  And yes, I used actual Rum for the cake.  The alcohol cooks out.  But I used her regular glaze recipe in order to avoid the straight up alcohol.  What, I don't drink alcohol.  No.  But that's a story for another day.  So I used a regular glaze and topped it off with some fresh berries.  HOLY SMOKES they were good.  While the cake itself was not terribly rich, when I topped it with the glaze and the berries, it just sent the whole dish right off into space.  So yummy.

Mini Rum Bundt Cakes


Ingredients:


1 cup (2 sticks) butter, room temperature, plus more for pans
2 cups all-purpose flour, plus more for pans
2 tsp. baking powder
1/2 tsp. coarse salt
1/2 cup buttermilk
2 Tbs. dark rum
1 cup packed light brown sugar
1/2 cup granulated sugar
5 large eggs

Glaze:

2 cups confectioners' sugar
1 Tbs. plus 1 1/2 tsp. milk

Directions:

1. Make the cakes: Preheat oven to 325 degrees F.  Generously butter nine 1-cup mini Bundt pans; dust with flour, tapping out excess.  Sift together flour, baking powder, and salt into a medium bowl.  Combine buttermilk and rum in a glass measuring cup.

2. With an electric mixer on high speed, beat butter, brown sugar, and granulated sugar until pale and fluffy, about 3 minutes.  Reduce speed to medium.  Add eggs, 1 at a time, beating well after each addition.  Reduce speed to low.  Add flour mixture in 2 batches, alternating with the buttermilk mixture and beginning and ending with the flour; beat until just combined.

3. Fill each pan with about 1/2 cup batter; tap pan on counter.  Bake until tops spring back when lightly touched, edges begin to pull away from pan, and a cake tester comes out clean, 18-25 minutes.  Transfer pans to a wire rack to cool 10 minutes; turn out cakes onto a rack to cool completely.  (Cakes can be stored at room temperature, wrapped in plastic, up to 3 days.)

4. Make the glaze: Whisk together confectioners' sugar and milk until smooth, adding more milk if needed to reach desired consistency.  Set cakes on a wire rack over a rimmed baking sheet.  Drizzle 1 1/2 Tbs. glaze over each cake.

Gorton's Grilled Salmon with Mango Avocado Salsa







Fit Friday returns with another Gorton's Seafood recipe.  I also have the winner for the Real Fabulous
Giveaway!  (Psssst...you have to read all the way to the bottom to see the winner.)  I am so in love with Gorton's products.  They are so versatile and simple to prepare.  Add a great side dish like this salsa, or the Cilantro Lime Rice that I served up with it, and you have an easy weeknight meal.









The salsa is fruity, but you have to make sure you get a good mango.  Look for one that is slightly soft,
golden and red in color.  If they are ripe, they will sometimes have a fruity aroma around the ends.  Be careful when cutting up the avocado and when you toss the salsa - too much handling can make it mushy.  This recipe is super simple and so light and fresh.  It's perfect for the Summer, it's gluten free, and perfect for anyone looking to improve their diet.






Gorton's Grilled Salmon
with Avocado Mango Salsa


Ingredients:


2 packages Gorton's Grilled Salmon
1 mango
1 avocado
1/2 red onion, finely chopped
2 Tbs. fresh cilantro finely chopped
2 Tbs. lemon juice
1 Tbs. olive oil
Dash of salt and pepper

Directions:

1. Chop mango into small chunks (if you haven't ever cut up a fresh mango, there is a great tutorial here.)  Chop avocado into small chunks as well.  Put both in a medium bowl.  Add red onion, cilantro, lemon juice, olive oil, and salt and pepper.  Toss gently to mix.  Cover with plastic wrap and put in fridge until ready to serve.

2. Prepare salmon fillets according to package instructions.

3. Place salmon on plate and spoon salsa over the top.  Serve immediately.

Serves 4

Fit Friday - Gorton's


I'm back with another review and giveaway with Gorton's Seafood!  I absolutely love these guys.  Their products have only gotten better over the years (I remember eating Gorton's fish sticks when I was a kid), and this year they have an awesome campaign that they are doing.  It's called Real Fabulous.





Real Fabulous means making food that makes me feel the best I can about myself.  Healthy food that will taste good and that I can enjoy, while helping me feel better all the way around.  And seafood is a perfect way to do that.  Gorton's has a line of grilled fish that makes it easy to prepare healthy food for your family.  For my review, I opted to prepare a recipe that was shared with me through Gorton's - Grilled Fillet Pear Salad.








The salad was amazing.  I had my doubts about the fish in the combination, but it was such a lovely addition. The warm fish, in a garlic sauce, was a great way to tone down the sweetness of the fruit.  The fish did not dry out, it didn't have an overbearing fishy taste, and the texture was like you took a fresh piece of fish from the butcher.  Definitely a great way to start the new year off right and "Real Fabulous!"

Grilled Fillet Pear Salad


Ingredients:


2 boxes Gorton's All Natural Garlic Butter Grilled Fillets
1 large pear
1 bag salad greens
1/4 cup dried sweetened cranberries
4 slices pre-cooked, low sodium, bacon, crumbled
2 oz. goat cheese, crumbled

Dressing:

2 tsp. balsamic vinegar
2 Tbs. olive oil
1/4 tsp. ground allspice
1/8 tsp. salt
1/8 tsp. pepper

Directions:

1. Prepare dressing by whisking together vinegar, olive oil, allspice, salt and pepper.  Set aside.

2. Prepare Gorton's Fillets according to package instructions.

3. While fish is cooking, core and slice the pear.  Divide the salad greens evenly among servings and lay pear slices over greens.  Sprinkle with dried cranberries, bacon, and goat cheese.

4. Remove fish from oven and cut into pieces.  Add to salad.  Drizzle with salad dressing and serve immediately.

Serves 4
